Hospitality, quality and authenticity. Case study: Langhe and Monferrato - Authenticity in tourism is one of the most studied topics in recent decades. Polysemic term yet clearly perceived by tourists, has given rise to empirical research and theoretical analysis, regarding both the supply and the demand. After positioning the subject in the recent scientific literature on tourism, the paper proposes an analysis of the relationship between quality and authenticity in hospitality, starting from a case of serendipity emerged during a case study on tourism in the hilly Langhe, Monferrato and Roero in Piedmont.
